Young leaves are used in salads. Roots are roasted for a coffee substitute. Sow shallowly, as seed requires some light to germinate,one seed per inch. Thin plants to 4-6"apart in rows 12-18" apart. Maturity 7-21 days. Germinates better in cool soils.
